Egg & Cheese “Souffle”


5 Tbsp butter

8 large beaten eggs

1 small onion, minced

12 oz low-fat cheddar or colby cheese, shredded

12 oz lowfat mozzarella cheese, shredded

3 1/2 cup fat-free half’n’half 10 slices sandwich bread

1/4 tsp paprika

1/8 tsp cayenne pepper

1 tsp dry mustard

1/2 tsp curry powder

1 tsp Worcestershire sauce

1. Butter Sides and bottom of a 13×9 baking dish or 2 9in square or round dishes Preheat oven to 325

2. Butter slices of bread, then cut into squares and place half in the dish

3. Sprinkle with half the cheese Add the remaining bread and top with remaining cheese

4. Mix eggs, half’n’half, and remaining ingredients and pour mixture over bread and cheese.

5. Cover and chill overnight

6. Bake for 1 hour or till knife in center comes out clean and top is lightly browned
