Grammy’s Broccoli, Chicken, and Rice Soup

2 tsp olive oil

1 cup chopped onions

1 cup mushrooms, sliced fresh

2 cloves garlic, minced

2 medium tomatoes, seeded and chopped

6 cups chicken or turkey broth

1/2 cup uncooked long grain whit rice

2 cups fresh broccoli, florets

2 cups boneless chicken breast, cubed

1/4 cup grated parmesan cheese

1/2 tsp black pepper

In a large non-stick saucepan, heat oil and add chicken and onions and saute over medium heat. Add the mushrooms, tomatoes, garlic, and saute till onions are translucent. Stir in the broccoli, rice, and broth. Simmer till rice is cooked and broccoli is tender. Add cheese and pepper. Servings 4. Serving size 2 cups

Substitute meats if you want, turkey, beef, pork, whatever is onhand.
